Steak Strip Salad

Continuing blogging my new-found love of Paleo friendly meals here is what I ate for lunch!

Too pretty to eat!

Steak strip salad

Ingredients:

  • 1 teaspoon coconut oil
  • lean steak strips
  • romaine lettuce
  • fresh blueberries
  • raw walnuts
  • grape tomatoes
  • Daiya (soy free/dairy free) cheddar cheese
  • balsamic vinegar or lemon juice
  • olive oil
  • salt and pepper to taste

Sauté the steak strips on medium/high heat in the coconut oil to your liking. Add on top of the romaine, put as little or as much of the fresh toppings on as you like. Drizzle on the vinegar and olive oil and a dash of salt and pepper. Enjoy! This was so quick to make and so satisfying to eat! I plan on making more soon!
