Cajun Pork Chops with Spinach & Mushrooms


Quick and easy dinner that even my 5-year-old ate!

Another Paleo recipe I came up with on the fly the other night. This cooked up so fast and tasted so good!

Cajun Pork Chops w/Spinach & Mushrooms


  • Thin cut pork chops
  • fresh baby spinach
  • mushrooms
  • Cajun seasoning
  • coconut oil
  • salt and pepper
  • splash of lemon juice

Start by heating a little coconut oil in a pan. Coat the pork chops with the Cajun seasoning and a little salt and pepper on both sides. Sear the pork chops in the pan on both sides and then lower the heat to let them cook fully. Once done take out the pork chops and in the same oil throw in the spinach and mushrooms. Splash in some lemon juice for extra flavor. Saute them up and put them on top of the chops. Serve with a veggie side. I also still had some of my Italian paleo crust to eat so that was a side as well. Enjoy!!
