Paleo Stuffed Peppers

My version …

So I had some leftover peppers (3) and about 1/2 pound of grassfed beef to use up and green peppers came to mind. Instead of stuffing them with rice which is a no no on the paleo diet I stuffed them with the chopped up pepper tops, banana peppers and coleslaw mix along with the beef. Fireworks went off in my mouth!! It was so delicious!! I WILL be making these again!

Ingredients:

  • 3 peppers (color of your choice)
  • 1 cup coleslaw mix
  • 1/2 pound grassfed beef or meat of your choice
  • 1/4 cup banana peppers
  • salt
  • pepper
  • smoked paprika
  • onion powder (cause I was out of onions)
  • garlic powder
  • olive oil

Directions:

Preheat the oven to 375 degrees while you’re prepping the other ingredients. Chop the tops off the peppers and scoop out the insides. Keep the tops and chop around the stem then discard the stem. In a sauté pan coat with olive oil and heat to start the sauté. Throw in all the ingredients except the beef and cook till it’s soft but still a little crunchy. Take out those ingredients and put them aside. Cook the beef in the same pan but throw in some salt and coat the top with smoked paprika and brown. Once browned throw the other ingredients back in and mix for about a minute. Get out a bread pan (so the peppers don’t fall over) and stuff them with the ingredients. Cook in the oven for 20 minutes and voila!! These are filling but would be great with a veggie side or a salad. I even want to do a scramble with just the stuffing part of it sometime. Yes it was that tasty. All the seasonings are to taste so put in as little or as much as you want. I usually don’t measure. Hope you like them!!
