Right now I’m dealing with a double ear infection and feel like CRAP! So I was very much surprised that I came up with this yummy concoction tonight all on my own, throbbing ears and all. I do hope you try it and tell me how you like it. I WILL be making this again! This would also be a super easy meal if you’re having company over as well. Here goes:
Cajun Bacon Wrapped Chicken
Fresh Chicken Breasts (as many as you need, I cooked 2)
1 strip of nitrate free bacon per breast (all natural if you have it)
cajun seasoning blend (I was lucky to have my mom’s blend which is amazing!)
yellow pepper cut into strips
Salt to taste
Pre-heat the oven to 375 degrees while you’re prepping the food. Rinse of the chicken breasts, pat dry with a paper towel. Dredge the breasts in Cajun blend until they’re totally covered. Take the bacon strip and wrap it around the breast with the ends under the breast. Insert a few pieces of yellow pepper strips in between the bacon and chicken. Place in an oven safe glass dish and bake for 40 minutes at 375. For the last 20 minutes bump up your oven to 400 and let the bacon get crispy.
**I cooked the sweet potatoes along with the chicken at the same time.
Spinach/Mushrooms/Onions side dish
2 tsp of coconut oil or olive oil
1 bag of baby spinach
1/2 of a small container of sliced mushrooms
1/2 white onion (cut into rings)
lemon juice (a few squirts)
Heat up the oil in a large sauté pan and throw in the mushrooms and onions until soft. Throw in some salt, pepper and a few squirts of lemon juice and stir for about a minute. Add in the spinach and stir it all up till spinach gets soft. Toss in a little more salt, pepper and lemon juice and you’re done!
Serve it all up and wish you made more than 2 servings! 😉
